Prepare ingredients
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- If you haven’t already, cook chicken thoroughly (boiled or baked), remove all bones, and shred finely. Steam broccoli until soft, then chop finely and let cool.
Mix the dough
- In a large bowl whisk the egg, pumpkin puree and olive oil until combined.
- Stir in the shredded chicken and chopped broccoli until evenly distributed.
- In a separate bowl combine oat flour, rolled oats, ground flaxseed, and baking powder. Gradually add the dry mix to the wet mixture, stirring until a stiff dough forms. If the dough is too sticky, add up to 2 tablespoons more oat flour; if too dry, add 1 teaspoon water at a time.
Shape and bake
- Turn the dough onto a lightly floured surface and roll to about 1/4 inch thickness. Use a cookie cutter or knife to cut into bite-sized shapes appropriate for your dog.
- Place biscuits on the prepared baking sheet about 1/2 inch apart. If using, sprinkle grated cheddar and chopped parsley on top of biscuits and gently press so they adhere.
- Bake in the preheated oven for 25–30 minutes until the biscuits are firm and lightly golden. For extra crunch, turn off the oven and let biscuits sit in the cooling oven for 10–15 minutes (oven off).
Cool and serve
- Remove biscuits from the oven and let cool completely on a wire rack before offering to your dog.
- Store as directed and feed as an occasional treat or part of a meal complement; adjust portion sizes for your dog’s size and needs.
